What is étouffée? Etouffee is aromatic sauteed vegetables and crawfish meat smothered in a savory roux-based sauce served over rice, steaks, fish or potatoes. Mildred's etouffee is prepared with a light roux and does NOT contain any tomato based products (sauce or paste). This is a signature family dish, with a history!
